Tunnel Hill mushrooms are grown in an old 1891 Railway Tunnel in Tasmania. With optimal growing conditions for cold-loving winter strains of oyster mushrooms and shitakes - you won't have tasted mushrooms like this. The husband and wife team are passionate about providing great produce to some of the top restaurants in Tasmania. These dried shitake and oyster mushrooms have been dehydrated by a chef - to develop a concentrated amazing flavour. You can eat them raw (like very gourmet mushroom-y chips) The bold umami flavour is amazing with tomato or cream-based pasta sauces. Spoon them onto polenta. Stir them into pan sauces for chops and cutlets.
