These are grown about five hundred meters behind the cheesery by Owen and Dianne Carrington Smith who painstakingly pick them by hand, pickle the fruit from each tree separately and are steadfast in their dedication to preserving olives by natural, slow fermentation (most mass-produced olives are preserved using chemicals to speed up the process). They are truly some of the best olives we have eaten anywhere in the world.

HOBART WHISKY CO. WHISKY PRESERVED APRICOTS 360g

These whisky-preserved apricots are something we just discovered, and they are a delight! They are the local product of infusing apricots with award-winning Tasmanian single malt from the Hobart Whisky Company.

COAL RIVER FARM DARK HONEYCOMB 100g

These are made using Leatherwood honey which is endemic to Tasmania, as it can only be made from nectar from the Leatherwood trees’ flower. It has a distinctive taste - that some say is representative of the Tasmanian wilderness. This honeycomb is rich and decadent, and coated in premium couverture dark chocolate in some very funky organic shapes. Perfect for the honey or chocolate-lover in your life!

We made a braggot and barrel-aged it! This is really something special. It's almost like a hybrid between a mead, a beer and a whisky - so basically a trifecta of deliciousness right here!

TASMANIAN BLACK GARLIC 50g

Tasmanian Black Garlic is not a garlic variety, but an organically grown Tasmanian purple garlic that has been aged and fermented. The long, slow fermentation process blackens the garlic cloves and produces a flesh of tender texture similar to soft, dried fruit. It also makes the garlic skin paper thin so it peels instantly. The taste is completely unique and delicious - sweet meets savoury, a hint of reduced balsamic vinegar and tamarind with tangy garlic undertones.
