Boucherie is a small scale free-range charcuterie producer from Hobart, Tasmania that supports local farmers. They produce small-batch premium cured and fermented meat products made from 100% Tasmanian ingredients. Their stuff tastes truly amazing (they've won a bunch of awards!) and I'm thrilled to be able to get my hands on some to share with you. Imagine a supremely delicious, spicy, spreadable version of salami ... and you get this 'Nduja. Traditionally from the region of Calabria, Italy this is a spicy addition to many recipes as pasta sauces, toppings and even with some baked dishes. Made from 100% Tasmanian free range pork cured using Tasman Sea Salt and some red chilli pepper paste, this is like a spicy spreadable version of salami! It's soft, and it is truly out of this world dolloped on pizzas, or spread over buttered toast, or stirred through pasta...the list of how you can use it goes on!
