I love the Panforte we made in our wood fired oven for a while. But the problem is it requires a cool oven and our oven rarely gets cool enough to make it. My sister makes the best Panforte in the world and this is her recipe (more or less). At a staff meeting last week, I handed a bowl of it around to taste-test. It was so good we all lost focus and started talking about Panforte instead! I love how dark and mysterious it is - full of nuts, fruit, cocoa and spice. A gorgeous gift or treat yourself and serve a thin slice with coffee and a shot of whisky.
