Annie is one of the stalwarts in the local artisan scene and has been growing, picking and processing elder flowers for the past decade.
The elder tree is steeped in folklore, history and superstition. The Druids thought of it as the tree of superstition, the White Goddess, who guarded the door to the underworld. The wood of Christ’s cross was said to have been made from the elder. The Anglo-Saxons thought that elders represented both good and evil – if you cut an elder down, a witch would manifest in its place, yet you'd also find them planted near wells and at the door of newly weds to keep witches at bay. If you fell asleep under the heavy scent of an elder in full bloom, you would be carried off to the world of the fairies and be protected from snakes and evil spirits.
Elder flower has a unique and delicate flavour with nuances of a sparkling wine, a mild ginger beer, lychees, lemons and cider. This concentrate is great as a mixer, as a long cold drink, or at the time of year, served hot with a slice of lemon.
