Osso Bucco, as Elizabeth David tartly observes, means "bones with holes" - which is probably why it is never translated on menus! This part of the animal, the hind shank, produces a ring of meat from the shin that is deliciously tender and sweet, more so than any of the other cuts from the entire animal. It's a hard working muscle, which means it will need a long, slow cooking process. There is an ample portion of meat that surrounds a flat portion of the bone, which has succulent, rich marrow in the centre. I think the classic yellow saffron risotto is the best accompaniment to a slow cooked Osso Bucco. Two portions per pack.
